Recipe: Spring Has Sprung Fruit Tart

Ingredients:

1 and 1/3 cup flour

1/4 cup natural sugar

1/2 teaspoon of salt

10 tablespoons of unsalted butter

2 tablespoons of water

3/4 cup white baking chips

1/4 cup of whipping cream

1 and 1/2 teaspoons lime zest

5 teaspoons lime juice

1 and 1/2 teaspoons vanilla extract

1 cup mascarpone cheese (room temp)

5 cups of desired cut fruit ie… kiwi, peaches, rasberries, blueberries, strawberries

Recipe

Mix flour, sugar and salt in a bowl and set aside

In a saucepan melt butter on medium heat until golden brown, being careful not to burn

As soon as the butter comes to a boil turn heat off and add 2 tablespoons of water to cool

Add butter to dry mixture and mix well until tart dough forms (should have consistency of playdoh)

Place into tart pan and push down in the bottom and sides of the pan, making sure it is even throughout, poke holes into the bottom of the crust to ensure bubbling doesn’t occur during baking.

Bake in a 350 degree oven for about 18 minutes or until golden brown (ovens may vary so check after 15 minutes)

For Tart Filling:

Mix mascarpone cheese, lime zest, lime juice, heavy cream, vanilla and 1/2 cup of white baking chips (melted). Mix well and pour into cooled tart shell.

Then simply layer with desired cut fruit, melt and drizzle the remaining white baking chips (1/4 cup) over the fruit.

Chill and Serve!
