
Ingredients
*4 tablespoons of good olive oil
*1 small onion
*10 large roma tomatoes
*2 tablespoons of minced garlic
*large handful of fresh basil
*1/4 cup of oregeno
*1/2 cup of red wine (optional)
*1 1/2 teaspoons of salt
*1/8 cup of sugar
*3/4 teaspoon of black pepper
*1/2 teaspoon of crushed red pepper
*1 tablespoon of *balsamic vinegar
Directions
1. Heat olive oil in a large stock pot
2. Cook down the onion and garlic until onion is caramelized
3. Crush the tomatoes in a blender or food processor until desired consistency (you can also do this by hand if your in a pinch)
4. Lower heat to low and slowly add in tomatoes, cook on low to medium heat for about 20 minutes
5. Add sugar, wine, balsamic vinegar and remaining seasonings and continue to cook on low to medium heat for an additional 40 minutes
6. Stir occasionally to keep bottom from burning.
7. Let rest for 5 minutes and serve
