Recipe: Fall Turkey Chili

Ingredients:

2 lbs ground turkey , 1 large yellow onion (diced) , 2 tablespoons olive oil , 2- 8oz cans of tomato sauce, 4 minced garlic cloves , 1/2 cup cilantro , 1 yellow bell pepper , 1 lb bag of pinto beans (soaked overnight), 1 15oz can drained kidney beans , 1 large package baby spinach , 1 package shredded carrots, 1 tablespoon chili powder, 3 teaspoons cumin, 1 teaspoon black pepper, 1 1/2 teaspoons salt, 2 teaspoons garlic powder, 1 tablespoon brown sugar, 1 teaspoon cinnamon


Cook onion, bell pepper and garlic in a large stockpot with olive oil. Cook until onions are caramelized. Add the ground turkey and cook until turkey is browned. Drain off 1/2 of the fat. Add in pinto beans, tomato sauce and all other ingredients except for the kidney beans. Bring all to a boil and then reduce heat and simmer for approximately 3 hours or until pinto beans are fully cooked.

In the last 30 minutes add the kidney beans, stir and continue to cook for another 30 minutes.
