2 lbs lean ground turkey or chicken
2 eggs
2 cups small chopped sweet potato
3 cups kale
½ white onion, chopped
2 knobs of garlic, chopped
1 cup shredded carrots
½ cup celery, chopped
2 tablespoons olive oil
1 small can (4oz) of tomato sauce
½ teaspoon ground red pepper
½ teaspoon pepper
1 teaspoon salt
1 teaspoon dried parsley
½ teaspoon onion powder
Season All to taste

In saute pan add olive oil, celery, carrots, sweet potato and onion. Saute until sweet potatoes are soft. Add kale last ten minutes of saute process (about half-way through).
Set aside to cool…Once cooled mix in 2 eggs, ground turkey, sauteed vegetables and half your can of tomato sauce. Mold into a greased loaf pan. Cover with other half of tomato sauce and cover with foil.
Bake at 350 degrees for 45 minutes and then remove the foil and increase heat to 375 degrees for 15 minutes to caramelize tomato sauce. Let rest for 10 minutes, cut and serve.
